Ham Paté Spread

Ingredients

12 ounces rich and savory cooked ham
3 ounces mascarpone cheese (substitute cream cheese + 1 tablespoon heavy cream)
1/4 cup butter
1/3 cup heavy cream, whipped
salt and pepper to taste

Directions:

Run the ham through a fine meat grinder. In a medium mixing bowl, beat cheese and butter until light and fluffy. Fold in whipped cream and ground ham.

Line an 8-inch deep Dutch oven with plastic wrap and fill Dutch oven with pate. Lightly tap Dutch oven on a counter to pack pate and remove large air gaps. Cover with another piece of plastic wrap, pressing wrap down onto the surface of pate, cover with lid. Chill in refrigerator or ice chest for 2 to 3 hours. When ready to serve, remove from refrigerator or ice chest 30 minutes before serving. Remove top layer of plastic wrap, place a 10-inch Dutch oven lid over the Dutch oven making as centered as possible. Invert Dutch oven and lid together allowing pate to release onto the lid. Serve with toasted crostini or thin sliced baguette slices.
