Plum-Pear Cobbler

Ingredients

2 (16 1/2-ounce) can purple plums in heavy syrup
1 package Betty Crocker SuperMoist white (vanilla) cake mix
1/2 cup milk
2 tablespoons butter or margarine, melted
2 eggs
4 pears, peeled and sliced (4 cups)
1 teaspoon grated lemon peel
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon sugar
1/4 teaspoon ground cinnamon

Directions:

1- Heat oven to 375°. Grease bottom only of rectangular pan, 13 x 9 x 2 inches, with shortening. Drain plums, reserving syrup. Remove pits from plums.

2- Mix cake mix, milk, butter and eggs with spoon until moistened (batter will be slightly lumpy). Spread evenly in pan.

3- Mix plums (with syrup), pears, lemon peel, 1/4 teaspoon cinnamon and the nutmeg in large bowl pour over batter.

4- Bake 40 to 45 minutes or until cake springs back when touched lightly in center.

5- Mix sugar and 1/4 teaspoon cinnamon sprinkle over baked cobbler. Serve warm. Store covered in refrigerator.

High Altitude (3500 to 6500 feet): Heat oven to 400°. Bake 45 to 50 minutes.

Betty's Tip: Cobblers and crisps taste best the day they are baked. This one is especially good served warm from the oven with Sweetened Whipped Cream (see Fabulous Frostings and Glazes chapter) or ice cream.
