Steak Tartare

1 pound hand chopped beef sirloin steak
1 egg yolk
2 tablespoons olive oil
1 tablespoon Tabasco Hot Sauce
1 tablespoon Worcestershire sauce
1 teaspoon finely chopped shallot
1 teaspoon capers
1/2 teaspoon Dijon style mustard
1/2 teaspoon ketchup
1/2 teaspoon chopped cornichon
crusty French bread toasted


Place hand-chopped sirloin in a large bowl. Slightly fl atten with back of a cooking spoon and make indentation in center of meat. Drop egg yolk in indentation and drizzle oil over meat. Add remaining ingredients and fold together until well incorporated. Serve with French bread.
