In a small, heavy saucepan, heat butter over medium heat. When melted, add Roquefort cheese and whisk for 1–2 minutes. Stir in the cream, lower heat, and simmer about 3–4 minutes. Set aside and keep warm.
In a large, heavy skillet, heat oil over high heat until nearly smoking. Season steak with salt and pepper. Add steak to pan and cook about 6–7 minutes on each side for medium-rare. Transfer steak to a warm platter and let rest 5 minutes. Thinly slice the steak, then plate it and spoon Roquefort sauce over each serving. Sprinkle with almonds and smoked salt.
