Gorgonzola and Mango Salad

Ingredients

1 cup fresh orange juice
1 tablespoon sugar
1 teaspoon cornstarch
1 ripe mango sliced lenghtwise into 3/4 inch slices
3 tablespoons olive oil
1 tablespoon balsamic vinegar
salt and pepper to taste
4 to 6 cups mixed field greens
3 Italian plum tomatoes cut in half lengthwise
1/2 cup chopped walnuts
1 small red onion thinly sliced
1/4 to 1/3 cup crumbled gorgonzola cheese

Directions:

Mix the orange juice, sugar, and cornstarch until well combined. Add mango slices and refrigerate, stirring occasionally, for 1–2 hours.

Whisk the oil, vinegar, salt, and pepper until combined.

In a large salad bowl, toss the mixed greens with the oil mixture. Add the tomatoes, walnuts, and onion and gently toss. Top with the marinated mango slices and then sprinkle with Gorgonzola cheese and serve.
