Crevettes Provencales

Ingredients

2 tablespoons olive oil
4 cloves garlic thinly sliced
1/4 cup finely chopped parsley
1 pound (16 to 20 count) extra large shrimp
salt and freshly ground pepper to taste

Directions:

In a large, heavy skillet, heat oil over medium-high heat. Add garlic and parsley and cook for 30–45 seconds, stirring constantly. Add the shrimp and sauté 2–21?2 minutes. To prevent drying, do not overcook. Season to taste with salt and pepper. Serve immediately with crusty French bread.
