Homemade bread is best eaten the same day it is baked, but it will keep two or three days at room temperature.

Store bread at room temperature in a cool, dry place. Wrap the completely cooled bread in a tightly sealed paper bag if you plan to eat it within a day or two. Plastic bags keep the bread fresh but also promote molding. You might want to switch from paper to a plastic bag if there is any bread left after 2 days because the bread will be a little drier.

Bread keep best at room temperature or for longer periods of time in the freezer, rather than in the refrigerator. The only time you may want to store the bread in the refrigerator is during hot, humid weather to help prevent mold from forming.
