Fried Polenta (Polenta frita)

Ingredients

2 1/4 cups boiling water
1 teaspoon salt
1 1/4 cups yellow cornmeal
1 cup cold water
5 tablespoons butter
pinch nutmeg
4 tablespoons freshly grated Parmesan cheese
cooking oil
Brazilian Rice (Arroz brasileiro)

Directions:

Bring to a boil 2 1/4 cups of boiling water. Add the salt. Mix 1 1/4 cups of cornmeal with the cold water and stir into the boiling water and cook until tender, stirring often so it won't scorch. Add 3 tablespoons butter, pinch of nutmeg, Parmesan cheese. The cornmeal should be thick.

Pour into a greased loaf pan to cool.

When cool, slice and fry in a mixture of cooking oil and remaining butter until browned and serve immediately.
