_ boneless skinless chicken breast halves
_ tablespoon olive oil
_ to 2 tablespoons purchased pesto
Shredded mozzarella cheese
1. Flatten chicken breasts to 1/4-inch thick between plastic wrap or waxed paper (see ALL ABOUT CHICKEN, 04-How to Flatten Chicken Breasts).
2. Heat 1 tablespoon olive in oil in 12-inch nonstick skillet over medium heat. Add chicken and cook about 10 minutes, turning once, or until chicken is no longer pink in center.
3. A few minutes before removing from heat, spoon 1 to 2 tablespoons purchased pesto over each piece and sprinkle with shredded mozzarella cheese; cover skillet to melt cheese.
