_ boneless skinless chicken breast halves
_ tablespoons oil
_ (1.2-ounce) container / packet dry fajita seasonings
_ small green bell peppers, cut into strips
_ small onion, thinly sliced
1. Flatten chicken breasts to 1/4-inch thick between plastic wrap or waxed paper (see ALL ABOUT CHICKEN, 04-How to Flatten Chicken Breasts).
2. Heat 2 tablespoon oil in 12-inch nonstick skillet over medium heat. Coat chicken with an entire 1.12 ounce packet dry fajita seasoning mix. Add chicken and brown on each side.
3. Cook about 8 minutes; turning once, or until chicken is no longer pink in center. During last 4 minutes of cooking, add 1 small bell pepper, cut into strips, and 1 medium onion, thinly sliced, stirring once or twice.
