Start with just a few ingredients and in less than 20 minutes you can have great-tasting chicken on the table-it's that easy and that quick! Many of these dishes will be complete with a side of pasta, rice or flavored instant mashed potatoes and a green salad or other vegetable.
1. Start with 4 boneless, skinless chicken breast halves.
2. Flatten chicken breasts to 1/4-inch thick between plastic wrap or waxed paper (see ALL ABOUT CHICKEN - How to Flatten Chicken Breasts).
3. Follow directions from one of the recipes in the Fast and Easy Chicken chapter.
