Chicken Pillows

Ingredients

1 whole chicken breast, halved, skinned, boned
1 clove garlic, halved
2 slices ham (1 ounce)
2 slices mozzarella cheese
2 tablespoons seasoned bread crumbs
2 tablespoons medium-dry sherry
2 tablespoons clarified butter
1 tablespoon chopped parsley

Directions:

Pound chicken breasts to 1?4 inch. Rub each with garlic. Place ham and cheese over chicken. Sprinkle with crumbs. Roll up and secure with wooden picks; place in lightly greased pan. Combine sherry and butter; heat briefly. Pour over chicken. Bake at 350° for 20–25 minutes. Sprinkle with parsley.
