Orange-Oatmeal Cookies

Ingredients

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon allspice
1 cup shortening
1/2 cup packed light brown sugar
1/2 cup sugar
2 eggs
2 cups quick-cooking rolled oats
1/3 cup orange juice
1 cup raisins
1/2 cup chopped pecans
2 teaspoons grated orange rinds

Directions:

Sift flour, baking soda, salt, cinnamon, and allspice together. Cream shortening and sugars in mixer bowl until smooth. Add eggs, beating until light and fluffy. Stir in oats. Add sifted dry ingredients alternately with orange juice, beating well after each addition. Stir in raisins, pecans, and orange rind. Drop by teaspoonfuls onto greased cookie sheets. Bake at 350° for 10–15 minutes or until golden brown.
