Rice with Ham and Shrimp

Ingredients

1/2 cup Spanish olive oil
1/4 pound chorizo sausage, thinly sliced
2 medium onions, finely chopped
4 cloves garlic, minced
3 cups chicken broth
3 medium tomatoes, finely chopped
2 medium green bell peppers, seeded and cut into strips
3 tablespoons chopped Italian parsley
2 teaspoons sugar
1/2 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon freshly ground pepper
2 cups uncooked short-grain white rice
1 pound medium shrimp, cleaned
1/2 pound lean ham, cut into 1 1/2-inch cubes

Directions:

Heat oil in Dutch oven until light haze forms. Add chorizo, onion, and garlic, and cook until chorizo is browned and onions are soft (approximately 5 minutes). Stir in remaining ingredients except rice, shrimp, and ham. Cook, covered, over medium heat until almost tender (approximately 12 minutes). Stir in rice, shrimp, and ham. Cook for 8–10 minutes, or until all liquid has been absorbed. Serve as an entrée with a hearty loaf of bread.
