Sprinkle chicken pieces with Greek seasoning. Cook in skillet with a small amount of oil about 5 minutes, turning often. Add seasoning blend, mushrooms, and soy sauce. Cook on medium-high heat 5–10 minutes, tossing to distribute soy sauce over all. May serve over rice or noodles, if desired.
Editor's Extra: If you can't find frozen seasoning blend in the frozen vegetable section of your grocery store, you can make up your own mix of chopped onions, bell peppers, celery, and parsley.
