Cry Baby Cookies

Yield: 2 dozen balls

Ingredients

1 cup sugar divided
1/4 cup peanut butter
3/4 cup vegetable shortening
1 large egg
2 cups flour
2 tablespoons molasses
2 teaspoons baking soda
2 teaspoons ginger powder
1 teaspoon cinnamon
1/4 teaspoon salt

Directions:

Preheat oven to 375 degrees.

Reserve 1?4 cup of the sugar. Mix all of the other ingredients together in large bowl. Roll dough into 1-inch balls. Sprinkle the reserved sugar on a plate and roll the balls in sugar until covered. Place on an ungreased baking sheet in ball form or flatten with your hand or a spoon and bake for 20 minutes.
