PERFECT Summer Meal

Things taste better when you're camping. It's a cold, hard, fact. At least, I think it is. It must be something to do with the fact that you're starving and there's no other food around. Although, being in the beautiful nature probably has something to do with it, too. It makes us more grateful.

Either way, these recipes are amazing. Even the ones written for inside can be adapted to make one amazing dutch oven winner.


Chicken and Potato Delight


Serving size: 9
Calories per serving: 418

Ingredients:
8 to 10 boneless, skinless chicken breasts
1/2 pound bacon
2 medium yellow onions, diced
1 1/2 cups fresh mushrooms, sliced
12 to 14 medium potatoes, peeled and sliced
1 (10 1/2-ounce) can cream of chicken soup
1 (10 1/2-ounce) can cream of mushroom soup
1 cup sour cream
3 cups grated Cheddar cheese
1 1/2 teaspoons seasoned salt
1 1/2 teaspoons poultry seasoning
1/2 teaspoon garlic salt
salt and pepper to taste


Directions:
Heat a 12" deep Dutch oven using 18-20 briquettes bottom until hot. Cut bacon into 1 inch slices. Add to hot oven and fry until brown. Cut chicken breasts into bite size pieces. Add chicken, onions, mushrooms, and 1/2 tsp. of the seasoning salt to the bacon. Stir, then cover and cook until onions are translucent and chicken is tender. Add potatoes. Stir in soups, sour cream, and the remaining seasonings. Salt and pepper to taste. Cover and cook for 45-60 minutes using 8-10 coals bottom and 14-16 coals top heat. Stir every 10-15 minutes. When done, cover top with cheese and replace lid. Let stand until cheese is melted.

Variation: stir in 1 lb. frozen peas or broccoli florets prior to topping with cheese

Calico Beans

Ingredients:
1/2 pound bacon, cubed and cooked. Not crispy, drained
1/2 pound beef, browned and drained
1/2 onion, diced
1/2 cup ketchup
1 teaspoon mustard
2 tablespoons vinegar
3/4 cup brown sugar
1 (28-ounce) can baked beans
1 (15-ounce) can kidney beans
1 (15-ounce) can butter beans


Directions:
Mix together bacon, hamburger, onion, ketchup, mustard, vinegar, and brown sugar. Add undrained cans of beans. Place in casserole dish and bake at 350 degrees for 1 1/2 hours.

Apple Cinnamon Crumb Cake


Serving size: 9

Ingredients:
4 cans spiced apple pie filling
2 packages Krusteaz cinnamon crumb cake mix
caramels topping


Directions:
Use a 14" Dutch oven. Mix cake per instructions and pour over apple pie filling. Cook about 45 minutes with 20 coals on top and 10 coals on the bottom. When done, swirl caramel ice cream topping on top.
