Thai Peanut Noodles

Serves 4


1 pound cooked, peeled shrimp
1 cup light Italian salad dressing, divided
2 tablespoons chunky peanut butter
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon ground ginger
1/2 teaspoon red pepper flake
1 carrot, shredded
1 cup green onion, , chopped
1 tablespoon sesame oil
1 (8-ounce) package angel hair pasta, cooked
2 tablespoons fresh cilantro, chopped
2/3 cup peanut, optional

Coat shrimp with 1/2 cup Italian dressing refrigerate for 30 minutes. Whisk remaining Italian dressing with peanut butter, soy sauce, honey, ginger and red pepper until smooth set aside. Sauté carrot, green onions and shrimp in sesame oil until shrimp is done, about 5 minutes. Toss pasta, peanut sauce and shrimp mixture together in a large serving bowl sprinkle with cilantro and peanuts, if desired.

TIP: Need to chop nuts in a hurry? Place them in a plastic zipping bag and roll with a rolling easy!
