Lemon Quinoa


Serves: 4
Total Calories: 66

Ingredients

1 cup quinoa
2 cups water
2 tablespoons olive oil
grated zest from half a lemon
4 teaspoons lemon juice
salt

Directions:

Combine all ingredients in a saucepan. Bring to a boil, reduce heat to low and cook, covered, about 12 to 15 minutes. Quinoa is done when the little white rings have separated from the grain.
