Curried Rice with Raisins


Serves: 6

Ingredients

1 cup brown basmati rice
2 1/4 cups water
salt
2 tablespoons olive oil
1 medium onion diced (1 cup)
2 teaspoons curry powder
3/4 cup raisins
1/2 cup peas (optional)
1 teaspoon water

Directions:

Combine rice, water and salt to taste. Bring to a boil, reduce heat to low and cook covered about 45 minutes. Remove from heat and let sit about 5–10 minutes, then fluff with a fork. Meanwhile, sauté onion over medium heat until soft. Add curry, and cook stirring about 2 minutes. Add raisins, peas, and 1 tsp. water. Stir and cook a couple of minutes until the raisins plump up a bit. Remove from heat. When rice is cooked, combine with the curry mixture. Stir to make sure it’s heated through.
