Coconut Rice


Serves: 4

Ingredients

1 1/2 cups basmati rice
1 (14-ounce) can light coconut milk
1 1/4 cups water
1 teaspoon honey
salt
1 tablespoon chopped cilantro (optional)
1-2 tablespoon toasted shredded coconut (optional)

Directions:

Combine rice, coconut milk, water, honey, and salt in a pan. Bring to a boil, reduce heat to low, cover and simmer 20 minutes. Remove from heat and let sit covered about 5 minutes before fluffing with a fork. Serve garnished with chopped cilantro and coconut, if you wish.
