New York Cheesecake Smoothie

Ingredients

1 1/4 cups frozen cherries
1 1/4 cups ricotta or cottage cheese or 1 12 1/2-ounce package soft silken tofu
2 1/2 tablespoons dairy or dairy free cream cheese
3 large graham crackers crumbled
1 1/4 teaspoons lemon juice
1 1/4 teaspoons vanilla extract

Directions:

Place all ingredients in the blender container, and blend until smooth and creamy. Serve, garnished perhaps with a cherry or a graham cracker. Enjoy!

VARIATIONS
Substitute frozen blueberries or strawberries for the cherries.
Sprinkle the top with crushed peanuts, pecans, walnuts, or hazelnuts as a garnish.
