Coconut Cream Pie Shake

Ingredients

1 (12 1/2-ounce) package soft silken tofu
1 1/2 cups dairy or dairy free vanilla ice cream
6 tablespoons toasted coconut
1 cup frozen apple juice concentrate (or pineapple juice)
2 tablespoons honey or maple syrup (optional)

Directions:

Blend everything together well and serve. Garnish with graham cracker or cookie crumbs, if desired. Enjoy!

*TIP: To toast coconut, spread in a small, hot, dry skillet, and lightly stir while toasting, about 5 to 10 minutes or until golden brown and aromatic.

VARIATIONS
Use dairy or dairy-free milk or yogurt in place of the tofu. Add 1?2 cup ricotta cheese for a creamy, “cheesecake” flavor.
