Country Gravy and Biscuits

Ingredients

Milk Gravy:
1/4 pound sausage, bacon, ham, or hamburger
4 tablespoons drippings
4 tablespoons flour
2 cups milk
salt and pepper

Biscuits:
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
6 tablespoons shortening
3/4 cup milk

Directions:

Milk Gravy:
In a skillet, brown meat and drain grease, saving 4 tablespoons of drippings. Add flour to drippings and meat in skillet. Let this mixture bubble for 3 minutes, then add milk. Stir constantly until well thickened. Season and serve hot gravy over biscuits or mashed potatoes.

Biscuits:
Mix dry ingredients; cut in shortening; add milk; knead lightly about 10 times. Pat to 1/2-inch thick, and cut into biscuits. Place in pan so that biscuits are not touching. Bake in preheated 400° oven until golden, about 15 minutes.

Variation: Buttermilk biscuits can be made by adding 1/4 teaspoon each baking powder and baking soda and 3/4 cup buttermilk in place of sweet milk.


Fun Fact: Mount St. Helens is an active volcano in the Cascade Range in Skamania County, Washington, 96 miles south of Seattle and 53 miles northeast of Portland, Oregon. Its eruption in 1980 was the deadliest and most destructive volcanic event in the history of the United States. Fifty-seven people were killed; 250 homes, 47 bridges, and 185 miles of highway were destroyed.
