Buttermilk Cinnamon-Nut Bread

Ingredients

4 cups unbleached flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup vegetable oil
2 1/2 cups sugar, divided
2 cups buttermilk
2 eggs
2 tablespoons chopped walnuts
1 tablespoon cinnamon

Directions:

Mix flour, soda, and salt. Combine oil and 1 1/2 cups sugar. Add buttermilk and eggs. Mix well. Stir into dry ingredients; add nuts. Pour batter into 2 loaf pans. Mix cinnamon and leftover sugar. Sprinkle over batter. Swirl batter with a knife. Bake at 350° for 40–45 minutes.
