Banana Pecan Pancakes

Ingredients

2 bananas
2 eggs
3 cups buttermilk
3 tablespoons butter, melted
2 cups unbleached flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cornmeal
1/2 cup bran
1 tablespoon honey
1/2 cup pecans, sauteed in butter until golden

Directions:

In a medium mixing bowl, mash bananas with fork until lumps are mostly worked out. Add eggs, buttermilk, and melted butter; mix thoroughly. In separate bowl, sift flour with baking soda and salt. Stir in cornmeal and bran; add dry ingredients to banana mixture, stirring until moistened. Add honey and pecans (that have been sautéed in butter until golden). Prepare as any other pancake.
