Nutmeg Spinach Soufflé

Ingredients

1 pound fresh spinach
2 tablespoons margarine
2 tablespoons all-purpose flour
1 teaspoon salt
1 cup milk
4 eggs, separated
1/4 cup chopped onion
1/8 teaspoon nutmeg
1/4 teaspoon cream of tartar
3 tablespoons grated Parmesan cheese

Directions:

Wash spinach; cook in small amount of salted water. Drain and press out all excess water; chop spinach. Melt margarine in saucepan; add flour and salt and blend. Gradually add milk and stir until thickened. Gradually add beaten egg yolks. Stir in spinach, onion, and nutmeg. Beat egg whites and cream of tartar until stiff. Fold into spinach mixture. Pour into greased soufflé dish. Sprinkle with Parmesan cheese. Bake at 375° for 50 minutes or until set.
