Grilled Stuffed Onions

Ingredients

1 1/2 cups herb- seasoned stuffing mix
1 cup shredded Cheddar cheese
1 teaspoon poultry seasoning
1/3 cup butter or margarine, melted
1/3 cup hot water
6 medium sweet onions
1 vegetable cooking spray
1 fresh oregano (optional)

Directions:

Combine first 5 ingredients, stirring until well blended and set aside. Cut each onion into 3 horizontal slices. Spread 2 tablespoons stuffing mixture between slices and reassemble onions. Place each onion on a 12-inch square piece of heavy-duty aluminum foil coated with cooking spray. Bring opposite corners together and twist to seal. Cook, covered with grill lid, over medium hot coals (350°–400°) 25 minutes or until tender. Garnish with fresh oregano, if desired.

Note: Onions may be baked, unwrapped, in a lightly greased, covered, 7x11x1/2-inch baking dish at 350° for one hour or until tender.
