Tomato Pasta Casserole

Ingredients

2 cups shell macaroni
1 pound ground beef
1 medium onion (chopped)
1 teaspoon crushed garlic
1 tablespoon olive oil
1 1/2 cups spaghetti sauce
1 (14 1/2-ounce) can stewed tomatoes
1 teaspoon sea salt
1/8 teaspoon sugar
1/2 teaspoon basil
1/2 teaspoon oregano
1 cup sliced mushrooms
3 cups sour cream
3 cups Jack cheese (shredded)

Directions:

Cook macaroni according to package directions; drain, set aside.

In a large pot, brown ground beef. Add onion and garlic and cook until tender about 5 minutes. Then add olive oil, spaghetti sauce, stewed tomatoes, salt, sugar, basil, oregano and mushrooms; simmer about 20 minutes, stirring occasionally.

In a greased 9 x 13 inch pan, pour 1/2 of cooked macaroni shells, cover with 1/2 of the meat mixture. Cover with 1/2 of the sour cream; 1/2 of the Jack cheese. Repeat layer with the remaining macaroni shells, meat mixture and sour cream. Top with remaining Jack cheese.

Cover and bake at 350 degrees for 30 - 35 minutes. Uncover and bake another 5 - 7 minutes to brown cheese. Let stand 5 minutes before serving
