Beef & Spinach Casserole

Ingredients

1 pound ground beef
2 tablespoons oil
1 medium onion (chopped)
1 (8-ounce) can tomato sauce
1/3 cup chili sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 cup red taco sauce
1/2 cup melted butter
12 corn tortillas (cut in quarters)
1 (10 3/4-ounce) can cream of mushroom soup
1 cup sour cream
3 cups shredded Jack cheese
1 (16-ounce) package frozen chopped spinach (thawed & drained)

Directions:

Brown ground beef in skillet; remove and set aside.

Add oil to skillet and saute onion for about 5 minutes. Return beef to skillet and add tomato sauce, chili sauce, salt and pepper.

Mix red taco sauce and melted butter together in small bowl. Dip each quarter in mixture. Cover bottom of greased 9 x 13 inch pan with half of the tortilla quarters, slightly overlapping each other.

Spread the beef mixture over tortillas then sprinkle with half of the cheese (1 1/2 cups).

Layer remaining tortillas dipped in taco sauce and butter on top of beef and cheese.

Mix cream of mushroom soup and sour cream together in small bowl; spread on top of tortillas. Sprinkle thawed, drained chopped spinach on top of soup and sour cream. Top with remaining cheese.

Bake covered for 30 minutes at 375 degrees oven. Uncover dish for the last 15 minutes of baking.
