Beef/Bean/Chip Casserole

Ingredients

1 large onion (chopped)
1 tablespoon butter
1 1/2 pounds ground beef
1/2 teaspoon salt
1 teaspoon crushed garlic
2 (8-ounce) cans tomato sauce
1 1/2 tablespoons red wine vinegar
1 tablespoon chili powder
1 (15 1/2-ounce) can kidney beans (drained)
1 (4-ounce) can sliced olives (drained)
1 (10-ounce) package tortilla chips
2 cups Cheddar cheese (grated)

Directions:

In large skillet saute onion in butter until golden brown; add ground beef and cook until done. Add salt, garlic, tomato sauce, vinegar and chili powder. Cover and simmer for about 15 minutes. Add the drained kidney beans and sliced olives.

Grease a 9 x 13 inch pan; spread on bottom with 1/3 of the chips. Sprinkle with 1/3 of the cheese, then spoon over cheese 1/2 of meat mixture; add another 1/3 of the cheese and 1/3 of the chips, then the remaining meat mixture. Top with remaining chips and cheese.

Bake for 30 minutes in 350 degree oven.
