Stuffed Bell Peppers

Ingredients

1 pound ground beef
1/2 cup onion (chopped)
1/2 cup mushrooms (chopped)
1/2 cup celery (chopped)
1/4 cup red bell pepper (chopped)
1/4 cup green bell pepper (chopped)
1 cup cooked rice
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups beef gravy
1 cup Cheddar cheese (grated)
10 medium-sized green bell peppers

Directions:

In large pan cook ground beef; add onion, mushrooms, celery, red pepper and green pepper. Saute lightly while constantly stirring. Stir in rice, salt, pepper and 1/2 cup beef gravy. Cover and cook over low heat for 15 minutes, stirring occasionally.

Meanwhile, halve green peppers lengthwise and remove core and seeds. Parboil peppers in enough water to cover peppers for about 5 minutes.

Drain well and arrange peppers cut side up into a greased 9 x 13 inch pan. Fill each pepper with beef, vegetable and rice mixture. Sprinkle with cheese. Pour remaining 1 1/2 cups gravy around peppers.

Bake 20 to 25 minutes in 350 degrees oven.
