Beef Enchilada Casserole

Ingredients

1 pound ground beef
1 (10-ounce) can enchilada sauce
16 ounces tomato sauce
16 ounces beef gravy
3/4 cup sliced olives, drained
3/4 cup sliced green onions (save 1/4 cup for top)
5 cups cheese (Jack & Cheddar mixed)
18 corn tortillas

Directions:

Cook ground beef until done. Put cooked ground beef into large bowl. Add drained sliced olives, 1/2 cup sliced green onions, and 3 cups mixed cheese. Mix well.

In large saucepan mix enchilada sauce, tomato sauce, and beef gravy. Mix together over low heat until well-blended.

Grease a 9 x 13 inch pan. Dip tortilla into sauce one at a time and place one layer of tortillas at the bottom of your baking dish, overlapping as necessary. Spoon 1/2 of the ground beef mixture evenly over the tortillas. Spoon 3/4 cup sauce over beef mixture; continue to make a second layer of tortillas dipped in sauce; then spoon the remainder of the beef mixture over tortillas; then add 3/4 cup sauce over second layer.

Dip remaining tortillas into sauce and place over second layer. Pour remaining sauce over casserole.

Sprinkle evenly remaining 2 cups of cheese over top, then spread remaining 1/4 cup sliced green onions over the cheese.

Cover with foil and bake 35-40 minutes in 350 degree oven. Let stand 15 minutes before serving.

Note: Beef broth and powdered gravy mix or Wondra Flour may be used for thickening.
