Corn, Green Chiles, and Cheese

Ingredients

1 onion, chopped
1 can diced green chili, drained
2 tablespoons butter
1 can whole-kernel corn, drained
1/2 pound grated Monterey Jack cheese
salt and pepper
1/2 cup sour cream

Directions:

Sauté onion and chiles in 2 tablespoons butter or enough to cover bottom of skillet. Add corn. Fold cheese into mixture until it melts. Add salt and pepper to taste. Just before serving, mix in sour cream. Serve immediately.
