Broccoli Casserole

Ingredients

2 (10-ounce) packages frozen chopped broccoli
2 eggs, beaten
3/4 cup mayonnaise
1 can cream of mushroom soup
18 Ritz crackers, crushed
1 (8-ounce) package grated Cheddar cheese
1/4 cup butter

Directions:

Thaw and put broccoli in 9x13-inch baking dish. Mix eggs, mayonnaise, and mushroom soup, and pour over broccoli. Put Ritz Cracker crumbs and cheese on top. Dot with butter. Bake at 350° for 30–40 minutes.

Even Easier: Halve the recipe and use 1/2–3/4 cup bread crumbs instead of Ritz Cracker Crumbs
