Oatmeal Raisin Cookies

Ingredients

3 cups rolled oats
1 cup whole wheat flour
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 cup raisins
1/4 cup unsweetened applesauce
1/4 cup fructose
2 egg substitute equivalents
1/2 cup nonfat plain yogurt
1 teaspoon vanilla extract

Directions:

1. Preheat the oven to 350°F. Combine the oats, flour, baking soda, cinnamon, and raisins.

2. Beat the applesauce, fructose, eggs, yogurt, and vanilla in a large bowl until creamy. Slowly add the dry ingredients and mix together.

3. Spray cookie sheets with nonstick cooking spray and drop by teaspoonfuls onto the cookie sheets. Bake for 12 to 15 minutes transfer to racks and cool.
