Bananas Foster

Ingredients

1/2 cup unsweetened pineapple juice
1/4 teaspoon cinnamon
3 large bananas
1 cup unsweetened pineapple slice, drained
1/4 cup rum
1 quart low-calorie, low-fat ice cream

Directions:

1. In a medium skillet, combine the pineapple juice and cinnamon.

2. Peel the bananas and slice in half crosswise quarter each piece lengthwise.

3. Add the bananas and pineapple slices to juice mixture and cook over medium heat until bananas are soft, basting constantly with juice.

4. Place rum in a small, long-handled skillet and heat until warm. Ignite the rum with a long match and quickly pour over the fruit.

5. Arrange ice cream in a serving dish, spoon bananas over the ice cream, and serve immediately.
