Pork Ribs And Apple-Kraut

Ingredients

2 cups apple juice
2 (1-pound) cans sauerkraut drained
3 to 4 pounds pork spare ribs country-style, cut in serving size pieces
4 apples cored, each sliced in 8 pieces
1/2 cup brown sugar
1 teaspoon salt
9 juniper berries
Freshly ground pepper to taste

Directions:

Put apple juice in bottom of large, heavy-type cooker or Dutch oven with lid. Put one-third of each ingredient in layers in order given repeat twice. Bring to boil over high heat. Turn heat down to low and simmer, covered, for 1 hour and 15 minutes.

* Juniper berries are available in specialty grocery stores.
