Pork Loin Roast With Cherry Sauce

Ingredients

4 pounds pork loin boned, rolled, and tied
1 (12-ounce) jar cherry preserves
2 tablespoons light corn syrup
1/4 cup red wine vinegar
1/4 teaspoon salt
1/4 teaspoon each cinnamon, nutmeg, and cloves

Directions:

Rub roast with a little salt and pepper. Place on rack and roast uncovered at 325° for 2 1/2 hours.

Combine cherry preserves, wine vinegar, corn syrup, salt, and spices. Heat to boiling, then reduce heat and simmer for 2 minutes. After roast has cooked 2 1/2 hours spoon cherry sauce over roast just enough to glaze. Roast about 30 minutes longer, basting often. Pork must be well done, so roast until thermometer registers 185°. Serve remaining sauce with roast.
