Spinach Casserole

Ingredients

2 (10 1/2-ounce) packages spinach thawed
6 tablespoons unbleached flour
2 pounds cottage cheese small curd lowfat
1/2 pound sharp cheddar cheese cut in 1/2 -inch cubes
1/2 cup margarine safflower, melted
6 eggs well-beaten
1/2 teaspoon salt
Freshly ground pepper to taste
1/4 teaspoon nutmeg ground (optional)

Directions:

Heat oven to 300° F. Using a sieve, press spinach dry with a spoon. Add flour to cottage cheese blend well. Combine with remaining ingredients. Bake in 2 greased 8-inch square casseroles for 1 hour.

Note: A 9 x 13-inch baking dish can be used bake at 325° F for 1 1/4 hours. This recipe can be baked the day before and reheated, or frozen.
