Spiced Celery And Fruit

Ingredients

2 tablespoons safflower oil
1 or 2 slice ginger root fresh, minced
1 clove garlic minced
2 cups celery diagonally-sliced
1/2 cup red onion diced
1 apple tart, cored, cubed 1/2 -inch thick, or sliced
1 teaspoon curry powder
1/2 teaspoon cumin ground
1/4 teaspoon cardamon ground cardamom
1/2 cup raisins golden
1/2 teaspoon salt

Directions:

Heat oil in a large heavy skillet. Add ginger root and garlic, stir-fry for 2 minutes. Add celery and onion stir-fry for 3 to 4 minutes until crisp-tender. Add apple, curry powder, cumin, cardamom, raisins, and salt. Stir-fry for 2 to 3 minutes or until raisins are heated through and spices are well-blended into vegetables. Serve immediately.

Note: If a more subtle ginger flavor is desired, do not mince, but leave slice whole. When cooking is completed, remove ginger slice.
