Spicy Meat Loaf

Ingredients

1 pound ground beef
8 ounces lean hot sausages
1/2 large onion, minced
1 rib celery, chopped
1 egg, beaten
1 teaspoon MSG (optional)
1/4 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
6 ounces chili sauce
1/4 cup milk
1 cup herb-seasoned stuffing mix
1 tomato sauce

Tomato Sauce:
1 (16-ounce) can chopped tomato
1 (6-ounce) can tomato paste
2 tablespoons minced onions
2 teaspoons oregano

Directions:

Combine ground beef, sausage, onion, celery, egg, MSG, garlic salt, salt, pepper, chili sauce, milk, and stuffing mix in a large bowl; mix well using your hands. Shape into a loaf. Press into greased 5x9-inch loaf pan. Bake at 350° for 1 hour. Remove from oven and pour off excess grease. Spread Tomato Sauce over top. Bake 15 minutes or until cooked through.

Tomato Sauce:
Combine tomatoes, tomato paste, onion, and oregano in a bowl and mix well. Yields about 3 cups.


Fun Fact: Helen Keller was born June 27, 1880, in Tuscumbia, Alabama. She lost her sight and hearing at nineteen months old. With the help of Anne Sullivan, better known as the Miracle Worker, Helen grew up to become a famous speaker who helped to set up the American Foundation for the Blind. The first U.S. circulating coin to feature braille, the Alabama quarter features an image of Helen Keller with her name in English, as well as in a reduced-size version of braille. In 1954, Helen Keller’s birthplace “Ivy Green” was placed on the National Register of Historic Places. Here you can see and touch the actual well-pump where Anne Sullivan reached into the dark, silent world of Helen’s mind and opened the window of communication.
