Pork Chops with Apples, Onions, and Raisins

Ingredients

4 pork chops, center cut ( 1 1/2 inches thick)
1 Salt and pepper to taste
1 tablespoon cooking oil
1 large yellow onion, sliced
1/4 cup raisins
1 large sweet apple, cut in wedges
1 ounce port wine
1/3 stick butter

Directions:

Use a 10- or 12-inch skillet that can be covered. Season chops with salt and pepper. Oil skillet and brown chops well on both sides. Place sliced onion over chops, and cover skillet. Cook slowly for 15 minutes. Remove cover. Place pork chops over the onions. Sprinkle raisins around pan bottom. Place wedged apple around chops, add wine, cover and simmer 15 minutes. Turn apple wedges during cooking to assure even cooking. Remove skillet top and simmer an additional 5 minutes to thicken sauce. Serve chops with sauce, and apples, onions, and raisins garnish.
