Spicy Fried Chicken

Ingredients

3 pounds chicken parts, or 1 (2 1/2-pound) fryer, cut up
1/2 cup all-purpose flour
1 teaspoon salt or garlic salt
1 teaspoon dry mustard
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1/4 teaspoon freshly ground pepper
1 corn oil

Directions:

Dry chicken pieces on paper towels. Combine flour and seasoning in paper bag. Place chicken pieces a few at a time in bag, twist end, and shake vigorously to coat chicken well. Heat 1 1/2 inches corn oil in deep skillet until temperature reaches 365°. Lower chicken into hot oil and cook 8–10 minutes to a side or until golden brown. Lift out and drain well on paper towels.
