Chicken Parmesan

Ingredients

1 1/2 cups dry Italian bread crumbs (or homemade)
1/2 cup grated Parmesan cheese
1 tablespoon salt
1 teaspoon pepper
6 boneless, skinless chicken breast halves
1 1/2 sticks butter, melted

Directions:

Combine crumbs, cheese, salt, and pepper. Dip breasts in melted butter, then in crumb mixture, being careful to coat breasts evenly.

Place breasts skin side up in a buttered baking dish and bake in a 350° oven for 35–40 minutes. Do not turn chicken.

Recipe may be prepared the day before and refrigerated, then baked. Also freezes well both before and after baking. To reheat after thawed, heat in a 325° oven.


Fun Fact: What does the word Mississippi mean? The name roughly translated from Native American folklore means “Father of Waters.” The translation comes from the Chippewa words “mici zibi” meaning “great river” or “gathering in of all the waters,” and the Algonquin word “Messipi,” meaning “big river.”
