Hummingbird Cake

Ingredients

3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs, beaten
1 1/2 cups oil
1 1/2 teaspoons vanilla extract
1 (8-ounce) can crushed pineapple, drained
2 cups chopped bananas
1 cup chopped nuts

Icing:
1 box confectioners' sugar
1/2 cup margarine
1 (8-ounce) package cream cheese
1 teaspoon vanilla extract
1 cup chopped nuts

Directions:

Mix by hand. Combine dry ingredients; add eggs and oil. Stir until well mixed. Add vanilla, pineapple, bananas, and nuts. Spoon batter into large greased and floured sheet pan. Bake at 350° for 40–45 minutes.

Icing:
Combine first 4 ingredients. Sprinkle with chopped nuts on top of Icing.
