Coca Cola Cake

Ingredients

2 cups unsifted all-purpose flour
2 cups sugar
2 sticks margarine
2 tablespoons cocoa
1 cup Coca Cola
1/2 cup buttermilk
2 eggs, beaten
1 teaspoon baking soda
1 teaspoon vanilla extract
1 1/2 cups miniature marshmallows

1 stick margarine
2 tablespoons cocoa
6 tablespoons Coca Cola
1 pound powdered sugar
1 cup chopped nuts

Directions:

Combine sugar and flour in a bowl. Heat margarine, cocoa, and Coca Cola to boiling; pour over sugar and flour mixture. Mix well then add buttermilk, eggs, soda, and vanilla. Mix well and add marshmallows to top. Bake in greased 9x13x2-inch pan for 35 minutes at 350°.

Icing:
Combine butter, cocoa, and Coca Cola, and bring to a boil. Pour over powdered sugar. After beating well, add pecans and pour over hot cake.


Fun Fact: Mississippi’s original soft drink, Barq’s Root Beer, was invented in 1898 by Edward Barq, Sr., in Biloxi (pronounced Bah LUX see). The building in Biloxi where the drink was first made and bottled still stands. Barq’s brand of root beer was notable for being the first major North American root beer to contain caffeine. A Mississippi Gulf Coast favorite, the number of franchise bottlers grew to over 200 by 1950. Barq’s was acquired by the Coca Cola Bottling Company in 1995 and is now sold throughout the United States.
