Spinach Salad with Bacon Dressing

Ingredients

1 1/2 pounds tender fresh spinach leaves, washed, torn
1/2 cup Bacon Dressing
2 eggs, hard-boiled, shredded

Bacon Dressing:
1 slice bacon, very crisp, cooled and blotted
1 1/2 teaspoons red wine vinegar
1/2 teaspoon hickory smoked salt
1/4 teaspoon dry mustard
1 tablespoon water
5 tablespoons vegetable oil

Directions:

In a salad bowl, toss spinach with Bacon Dressing until leaves are well coated. Divide in salad plates and top each with shredded egg.

Bacon Dressing:
Crumble the crisp bacon and add it to the vinegar in a jar with a tight lid. Add the hickory smoked salt and dry mustard. Mix until the salt is dissolved. Add water and oil. Cover jar tightly and shake vigorously for 30 seconds. Store covered in refrigerator. Makes 1/4–1/2 cup.
