Ingredients

Salad:
1 large mango, peeled and sliced
3 apricot, peeled and quartered
3 plums, peeled and quartered
2 cups strawberries, halved
1 small bunch green grape, washed and stemmed
1 pound mixed lettuce
------------------------------
Avocado Dressing:
1/2 medium avocado, peeled and mashed
1/2 cup plain yogurt
1 tablespoon honey, or to taste
2 scallion, minced (white part only)
1/2 teaspoon lemon zest
1/4 teaspoon orange zest
1/8 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon freshly ground black pepper
1/2 teaspoon minced Fresno or red jalapeño pepper
2 tablespoons light cream or to taste

Directions:

Whisk the dressing ingredients together in a medium bowl, or mix in a blender, if you prefer. Adjust seasoning to taste, and drizzle over mixed fresh fruits and greens.

Note: The Avocado Dressing also goes well with cold chicken or turkey; and, if you omit the honey and add half a minced garlic clove, it partners beautifully with cold shrimp or scallops, or a bowl of summer vegetables.

Fun Fact: Fabulous '50s food and period decor make Route 66 Diner a must-eat for visitors to Albuquerque, New Mexico. Sit at the soda fountain or in a comfy booth, play the jukebox, and enjoy nostalgic foods just like they used to be. On Central Avenue (old Route 66), here's where you can still "get your kicks on Route 66."
