A Truly Different Chicken Salad

Ingredients

Vinaigrette Dressing:
1/2 teaspoon dried parsley
1/4 teaspoon basil
1/4 teaspoon dried chives
3/4 teaspoon salt
1/2 teaspoon pepper
1 clove garlic, crushed
1 teaspoon dry mustard
1/4 cup white wine vinegar
1/2 cup olive oil
1/4 cup oil

Salad:
8 chicken breasts halves, skin removed
1 tablespoon lemon juice
1/2 teaspoon salt
3/4 cup Vinaigrette Dressing
1 cup mayonnaise
2 teaspoons chopped fresh tarragon, or 1 teaspoon dried
1 lemon peel, grated
1 bunch of lettuce, red-tip, curly leaf, etc.

Directions:

Vinaigrette Dressing:
Mix all of the ingredients by shaking in a jar. Chill. Shake well before serving.

Salad:
Put the chicken breasts into a glass baking dish or pan in a single layer. Mix the lemon juice and salt and pour over the chicken. Cover and bake for 30 minutes at 400°. Cool and cut chicken into small, bite-sized pieces. Marinate it in the Vinaigrette Dressing for about 3 hours at room temperature. Mix the mayonnaise, tarragon, and lemon rind. Combine with the drained chicken pieces. Chill. When ready to serve, put salad on large lettuce leaves.
